If you  know about various methods of cooking and/or watch cooking competitions on television, you will have heard the term Sous Vide. This is a method of cooking where the food is put into a vacuum-sealed plastic bag that is then submerged in water and cooked at a low temperature. Many fine restaurants use this method of cooking to create tender, flavor-filled recipes. This new Sous Vide machine from the Tribest Corporation will be of interest to vegans, vegetarians and omnivores.

This machine will cook food to exactly 118º (or whatever temperature you determine) and hold it there indefinitely. This insures the food will not be depleted of nutrients and won’t overcook. There is, of course, the issue of using plastic bags and each cook will have to decide that issue for themselves.

This particular machine is very easy and fun to use. The removable carafe is easy to fill and remove the water; the transparent carafe lets you watch the cooking progression without opening the unit and the removable lid prevents evaporation and helps to regulate precise temperatures.

The displays are very readable and the instructions are user-friendly. We cooked an apple that had been sliced and we added pie spices with a bit of butter. The fruit was cooked tender-crisp and all of the resulting liquid was able to be utilized.

For our omnivore friends, we cooked two steaks: one came out very tender while the second one did not. Because they were purchased and prepared at the same time, we have to assume this was due to the cut of meat and not the machine.

If you’ve wanted to experiment with Sous Vide cooking or if you are on a raw, vegan, or vegetarian diet, this machine could be exactly what you’re looking for.
