After extensive research, travel and testing, George Matelijan identified the 100 most nutrient-dense and health promoting foods. This includes such foods you might expect such as spinach and bok choy but also foods like lima beans, turmeric and grass-fed cheeses. The book explains the various benefits of the 100 foods and explains why some foods were left out. The author admits there are more than 100 healthy foods; he chose the top 100. Also explained is the composition of each food and what it offers in terms of nutrition.
Just as important as what we eat is how food is cooked. We’re introduced to nutrient-rich food preparation, storage and cooking. Instructions are given for common items such as green beans as well as for plums, prunes, and fish! There is no nutritional information left out of this book.
